They look crispy but they are so soft. Addie is kind of picky on textures so I wasn't for sure if she would eat it or not, but she did eat a few bites for breakfast and then later ate almost a whole one for snack. Score! So, this is picky toddler approved. Brian can also take a couple of these as he is heading out the door for work in the morning and eat them on the road.
Here is what you need:
- 1 1/2 cups of either quick or old fashioned oatmeal uncooked
- 2 ripe bananas
- 1 cup unsweetened applesauce
- 1/3 cup raisins
- 1 tsp vanilla
- 1 tsp cinnamon
- Preheat oven to 350 degrees
- Mix Vanilla and cinnamon into the applesauce
- Mix the applesauce mixture with all the other ingredients and let that sit for 10 minutes
- Drop the cookie dough by spoonfuls onto cookie sheet and flatten to make them round.
- Bake for 30-35 minutes or until they are golden in color
- Remove from heat and let rest for 5 minutes.
- Remove onto a cooling rack and then enjoy.
Sofia was the food critic while eating this for breakfast. Her suggestion was that it needed sugar. Next time we might add in some honey to add in a little sweetness, but I think the applesauce and bananas did a good job on their own making it sweet. Her other compliant was that there weren't enough raisins. I guess there can never be too many raisins.
