Oatmeal sandwich Cookies

These cookies did not last long at all in our house.  These cookies are delicious.  The outmeal cookies are crispy on the outside, but when you bite into them they are sooo soft and then the frosting just makes them even better.  This recipe comes from my go to cookie recipe book, Old Fashioned Cookies. 

Cookies:
3/4 Butter flavored shortening plus additional for greasing the pans
1 1/4 cup light brown sugar
1 egg
1/3 cup milk
1 1/2 tsp vanilla
3 cups quick oats
1 cup flour
1/2 tsp baking soda
1/2 tsp salt

Heat oven to 350.  Grease the baking sheets with shortening.

Combine shortening, brown sugar, egg, milk, and vanilla in a large bowl.  Beat at medium speed with electric mixer until blended

Combine oats, flour, baking soda and salt.  Mix into creamed mixture at low speed just until blended.  Drop rounded measuring tablespoonfuls of dough 2 inches apart on prepared baking sheets.

Bake one sheet at a time at 375 for 10-15 minutes or until lightly browned.  Cool 2 minutes on baking sheet.  Remove cookies to foil to cool completely.

Frosting:
2 cups powdered sugar
1/4 cup butter flavored shortening
1/2 tsp vanilla
Milk

Combine powdered sugar, shortening, and vanilla.  Beat at low speed, adding enough milk for good spreading consistancy.  Spread on bottoms of half the cookies and top with remaining cookies.

Makes about 16 sandwich cookies
